A neighborhood friend sent me this variation for an Indian uthapa. Add a teaspoon of curry powder and a medley of whatever veggies you have on hand to a regular batch of Sunday Morning Pancake Mix. I would saute them before folding them into the batter. Roz and her family used peas, chickpeas and tomatoes. Garlic, zucchini, onions and carrots would also work well. Top it off with a yogurt sauce or a zigzag of Sriracha and you'll be in cloud nine.
